PAN BRIÉ / BRIÉ BREAD

Este mes de Mayo el reto de Bake the World es este maravilloso Pan Brié.
El pain brié es un tipo de pan tradicional de Normandia.Su nombre procede del proceso de amasado, ya que brié procede del verbo normando antiguo brier, ‘aporrear’. Su preparación incluye un largo periodo de amasado y golpeado de la masa, se hace de forma manual para dar a la miga una textura muy compacta.

This September the girls of Bake The World propose us making this wonderful Brié Bread.
Brié Bread comes from Normandia. Its name is due to the kneading process, since "brie" means "beat". The preparation includes a long perior of kneading and beating the dough, by hand, that gives the crumb a really compact texture.


Cuando lo probéis, lo repetiréis seguro, es un pan muy sabroso, tiene una miga tierna y esponjosa y una corteza fina y crujiente.A pesar del trabajo que da con el rodillo desde luego que este es uno de los panes mas exquisitos que he probado, merece la pena el esfuerzo, ya no es necesario ir al gimnasio!!! jajjajaja.

When you make this bread you just want to repeat it because it´s really tasty, with a tender pillowy crumb and crunchy thin crust. The kneading is a little bit tough but it´s totally worth it, and you can skip going to the gym today!! LOL

PASTEL DE VAINILLA Y FRESAS / STRAWBERRY VANILLA CAKE



Con el verano a la vuelta de la esquina solo apetecen postres refrescante y con frutas frescas.Aprovechando que me quedaban unas cuantas fresas en casa he decidido hacer este pastel.
Perfumado con vainilla, un relleno de fresas naturales y un glaseado de mantequilla tostada de vainilla,quien se podría resistir a incarle el diente.

Summer is coming and we just fancy refreshing desserts with fresh fruit. I had some strawberries at home so I decided to give this cake a try.
Vanilla scented, with a fresh strawberry filling and brown butter icing, who could resist this sweet tentation? 


La verdad es que es un pastel muy fácil, podéis aprovechar las fresas antes de que se acaben!!Es un pastel ligero y suave, las fresas le aportan mas suavidad si cabe. No os podéis imaginar el aroma que impregnaba la casa cuando lo estaba horneando!! Bueno y ya cuando lo tuve que dejar enfriar para poder probarlo, con ese olor por todas partes jajajjaja, no sabia donde meterme para no cortar un trozo.

It´s really easy to make, and we have to take advantage of the strawberry season before it´s over!! This cake is light and strawberries make it really soft. Once you put this cake in the oven its fragrance invades the whole house, you can´t even imagine how hard was waiting while it was cooling in the rack!! The house smelled amazing.

CHOCOLATE BAILEYS MUD CAKE (PASTEL DE CHOCOLATE Y BAILEYS)




Hay algo mas reconfortante y placentero que el pastel de chocolate?? Es la cura universal de los males, los antojos de azúcar ( al menos para mi).Es que con recetas como estas que son muy fáciles de preparar no hay escusas para disfrutar de un buen pastel de chocolate.

Is there anything more comforting and delightful than a chocolate cake? It´s a universal healing for any problem, sugar cravings cure anything, ( at least for me ). We have no excuse, we have to enjoy wonderful handmade chocolate cakes like this one because the resipe is really easy.


Se trata de un pastel de Baileys, de barro de chocolate( como dicen los americanos),rematado con una ganache ultra suave y sedosa.El Baileys le da un sabor y una fragancia sutil.
Este es un pastel que no quiere exceso de horneado, mas bien al contrario.

It´s a chocolate Baileys mud cake topped with an extra silky and smooth ganache. Baileys gives it flavour and really subtle scent.
We should not overcook this cake, we want it to be really moist and tender indeed.

CROISSANT BRIOCHE DE FRESAS / STRAWBERRY BRIOCHE CROISSANTS



El brioche clásico francés, no es mas que pan enriquecido con huevos y mantequilla.Con una fina corteza y una miga tierna.Ligero y esponjoso son dos palabras perfectas para describirlo.Son como un vicio!!! una vez que empecéis a comer no podréis parar!!!

Classic French brioche, is just a kind of bread enriched with eggs and butter. With a fine crust and a tender crumb. Light and fluffy are two words that describe it really well. These croissants are really addictive!! Once you start eating them you can´t stop.


En esta ocasión he preparado estos croissant tipo brioche que nada tienen que ver con la elaboración clásica de los croissant de mantequilla.Estos son bastante mas fáciles de elaborar, sin complicarte con el tema de los pliegues!! Y además son bastante mas rápidos de elaborar, aunque necesitan bastante tiempo de reposo, pero no hay que estar pendiente de la masa.

This time I´ve prepared these brioche croissants that have nothing in common with the classic French butter croissants elaboration. Brioche croissants are easier to make, they need some rest time but you don´t need to look after them as much as you have with French croissants dough.

BOMBONES DE BRANDADA / COD BRANDADE BOMBONS



Hoy os he preparado un aperitivo que es una sorpresa para el comensal, brandada envuelta en pasta filo y en forma de bombón.Los he acompañado de una ensalada variada regada con un buen aceite de oliva virgen extra.Es aconsejable servirlos recién fritos, crujientes y calientes.

I bring you today an apetizer that surely will surprise our guets, cod brandade wrapped in filo paste that looks like little bombons. This time I´ve accompained it with a varied salad with an extra virgin olive oil dressing. I recommend serving them just after frying, crunchy and hot.


La brandada es un plato de invierno tradicionalmente preparado por hombres y no mujeres. Se trata de una emulsión, antiguamente machacada al mortero (ahora se hace también con batidora), en la que se monta, como para hacer una mahonesa,bacalao levemente hervido y aceite de oliva. A veces se añade un poco del agua de cocción del bacalao. En esta cocción, se ha podido añadir laurel y cebolla además del bacalao y de agua. La brandada final se puede condimentar con pimienta, ajo y perejil picados, y siempre necesita una rectificación de sal al final. Se suele comer con pan tostado o con patatas cocidas (hervidas o a la brasa) con su piel y partidas por la mitad.

Brandade is a dish that was traditionally prepared in Winter season and curiosly it used to be made by men. It´s an emulsion so it was made in the mortar ( nowadays we use an electric mixer insteed ). It´s similar to the mayonnaise preparation, we need to whip slightly boiled cod and olive oil. We can add a little bit of the water we have used to cook the cod, this water can be enriched with bay and onion. It´s seasoned with pepper, garlic and minced parsley, and we have to adjust the salt. It goes with toasted bread or boiled or roasted unpeeled potatoes in two halfs.

BUNDT CAKE DE NARANJA Y CARDAMOMO / CARDAMOM AND ORANGE BUNDT CAKE



Un bundt cake es un bizcocho que se ha horneado en un molde para bundt. Estos moldes tienen una característica chimenea estriada que permite que la masa del bizcocho se hornee por completo y uniformemente.
Son bizcochos muy húmedos por regla general y con una característica cobertura perfecta. Admiten todo tipo de ingredientes cómo frutos rojos, manzanas, frutos secos,… incluso podrás hacerlos con puré de calabaza o con cerveza.

We use a bundt cake pan for baking this kind of cake. The singular characteristic of this kind of moulds is that they have a hole in the middle that allows baking the cake completely and evenly.
Usually they are really moist and have a perfect covering. You can add a wide range of ingredients to this cake, like berries, Apple, nuts,.....you can even use pumpking puree or beer.
 

El estilo del molde en América del Norte se popularizó en la década de 1950 y 60, después de que el fabricante de utensilios de cocina Nordic Ware registró el nombre "Bundt" y comenzó a producir sartenes Bundt de fundición de aluminio.

This kind of pan became popular in 50´s and 60´s in North America, after the hard ware manufacturer Nordic Ware named it "Bundt" and started producing Bundt pans made of cast aluminium.

MANCHEGO CHEESECAKE CON PURE DE MORA Y SORBETE DE FRAMBUESA / MANCHEGO CHEESECAKE WITH BLACKBERRY PUREE AND RASPBERRY SORBET


Hoy os presento este cheesecake en versión individual.Con un toque diferente, un guiño a nuestra tierra, un queso manchego.Tiene un sabor inteso, pero a la vez es suave en el paladar.La combinacion con las graham cracker es alucinante.

Today I bring you this version of an individual cheesecake. With a twist, it´s made with a traditional Spanish cheese, Manchego. With an intense flavor and smooth at the same time when you taste it. It combines perfectly with the graham cracker, just awesome.


Y si además la acompañamos por unas frutas del bosque, que como ya sabréis combinan de maravilla, pues tenemos como resultado un postre magnifico.A mi personalmente me encanta este postre, soy superfan de las tartas de queso....cuando salgo a comer fuera, a la hora del postre siempre pregunto: tenéis tarta de queso? Es casera? jajjajaj no tengo remedio!!!
Además es bastante sencillo de elaborar, y a pesar que lleva varias elaboraciones, son todas bastante rápidas.

And accompanied by berries, that combines perfectly with cheesecake, it´s an excellent dessert. Personally, I love cheesecake, everytime I eat out and it´s dessert time, I ask for cheesecake....there is nothing to do about me!! LOL
It´s quite easy to prepare, and despite it has several elaborations, they are really easy.

BAGELS


El bagel es un pan elaborado tradicionalmente de harina de trigo y que suele tener un agujero en el centro.Existen variantes de la receta que le añaden un toque dulce (normalmente malta, azúcar o miel) al bagel durante la elaboración. Antes de ser horneado se cocina en agua brevemente, dando como resultado un pan denso con una cubierta exterior ligeramente crujiente.
La masa a menudo se saborea con diferentes productos tales como sal, cebolla, ajo, huevo, centeno. Existen algunas variedades no tan tradicionales como: tomate, salvado, queso, comino  entre otros. Los bagels pueden estar cubiertos de semillas de sésamo, cebolla o sal.

Bagels are kind of bread traditionally made with wheat flour with a whole in the middle. Some versions of the recipe add a sweet touch to the bagel ( usually using malt powder, sugar or honey). Before baking them, they are slightly cooked in boiling water, this produces a really dense bread crumb and a lightly crunchy crust.
Usually the dough is seasoned with salt, onion, garlic, egg or rye. And there are other variations that include tomato, bran, cheese, cumin....
Bagels can be topped with sesame seeds, onion, salt..... 


Contrario a la leyenda común, el bagel no se creó en la forma de un estribo para conmemorar la victoria del rey de Polonia Jan III Sobieski sobre los turcos otomanos en la Batalla de Viena en 1683. El bagel fue inventado mucho antes, en Cracovia, Polonia, como un competidor al bublik, un pan delgado de harina de trigo diseñado para la Cuaresma. Leo Rosten escribió en "Las Alegrías de Yidis" que por primera vez se menciona la palabra "bajgiel" en el Reglamento de la Comunidad de Cracovia en 1610. Este reglamento declaró que un bagel se debería dar como regalo a una mujer en parto. En el medio del 16 y el principio de los siglos 17, el "bajgiel" se convirtió en un elemento básico de la dieta nacional polaca.
Posteriormente, el alimento se popularizó entre la comunidad judía a mediados del siglo XIX, cuando panaderías de Londres comenzaron a comercializarlos regularmente en tres unidades. Posteriormente, la emigración a América del Norte de ciudadanos europeos y judíos favoreció la implantación del alimento y su comercialización.

It´s said that bagels were created to commemorate the victory of Poland king, Jan III Sobieski over the Ottoman Turks in the Battle of Viena in 1683.
But actually, they were created much sooner, in Krakow, Poland to compete with the Bublik, a thin wheat flour bread tipycal of the Lent. Leo Rosten wrote in his book "The Joys of Yiddish" that first time that the word "bajgiel" was used was in the "Community Regulations" of Krakov in 1610. This regulations established that a bagel should be presented as a gift to women after giving birth. During 16th  and 17th  centuries "bajgiel" became a basic element of the national Poland diet.
In XIX century bagels became popular in the Jewish community, when London bakeries started selling them. Lately, bagels were brought to United States by immigrant Polish-Jews.

TARRITO DE LIMA CON GRAHAM CRACKER Y ARANDANOS (KEY LIME VERRINE WITH TOASTED GRAHAM CRACKER AND BLUEBERRIES)


Bueno como parece que el calor ha llegado para quedarse, hoy os propongo un postre muy refrescate y muy vistoso.Es ideal para cuando tenéis invitados, ya que lo podéis tener todo preparado con antelación.Además de ser super rápido esta delicioso y tan fresquito!!!

It´s seems hot weather is here and it´s came to say, so today I bring you a very attracting and refreshing dessert. It´s perfec for those occasions that we have guests, because you can have everything prepared in advance and put all together before serving. It´s really quick and just delicious!!


Os voy a contar algo sobre el termino culinario verrine.Es originario de Francia, su traducción literal es tarrito, aunque solemos utilizar mas la de vasito.Una verrine es un pequeño vaso de cristal donde se sirven alimentos preparados, ya sean dulces o salados.Formando capas e intentando que tengan una presentación atractiva.Combinando colores, sabores y texturas.

Let´s talk about the culinary term "verrine". It´s a French word and literally meas "little jar". It´s a little glass where we serve our preparations, salty or sweet, forming layers and combining flavours and textures that make it really attractive.

LEMON TART WITH PASION FRUIT SORBET (TARTA DE LIMON CON SORBETE DE FRUTA DE LA PASION)


Parece que ya va haciendo calor!! Por ello que mejor forma para combatirlo? con postres ligeros y refrescantes.
Os gusta el sabor a cítricos? El limón? La fruta fresca?..............
Si además las combinamos con una crujiente tartaleta de almendra y un crumble de pistachos......deliciosa verdad?

Summer heat is here!! What better way to beat it than with light and refreshing desserts? Do you like citrus flavour? Lemon and fresh fruit?.......
Well, if we combine all this things with a crunchy almond tart and pistachio crumble.... just delicious, right?

PAN DE MOLDE / MOULD BREAD



Hoy os traigo un pan de molde, realmente rico y sabroso con una textura increíble, muy tierno y esponjoso.Es ideal para acompañar vuestras comidas, para preparar un sandwich, unas tostadas.
No os preocupeis si no tenéis el molde adecuado, yo no tengo y mirar el resultado.Yo he utilizado uno de pirex que es un poco mas ancho pero podéis utilizar un molde de cake y si ya vais a hacer este pan muy seguido si os interesaría haceros con molde adecuado.

Today I bring you the recipe of mould bread, really tasty and with an incredible texture, tender and fluffy. It goes perfec with everything, sandwiches, toasts.....
Don´t worry if you don´t have a proper mold, I don´t have one either and the result has been awesome. I´ve use a pirex, it´s a little wider but it´s ok. You can use a long cake pan for example. It´s addictive so if you are going to repeat this recipe again and again get one. 


El pan de molde es un tipo de pan que se caracteriza por tener una textura muy blanda.Se conserva mucho mas tiempo en comparacion con otros tipos de panes.su contenido en grasa es mas alto que el del pan común ya que suele llevar mantequilla u otras grasas.
A partir de 1930 se empiezan a utilizar máquinas para cortar rebanadas de pan. Esto resultó ser muy útil para la venta masiva de este básico y los fabricantes empezaron a diseñar nuevas formas de comercializarlo, empaquetarlo y comercializarlo. Así apareció el pan de molde.

Mold bread is well known for its soft and tender texture. It remains in perfec conditions longer than other kind of breads. It contains more fat than regular bread because there is butter ( or other kind of fat ) in the recipe.
Till 1930, cutting machines have been used to cut mold bread in slices which makes easier its commercialization, changing the packaging and the way it was sold.

ENSAIMADA MALLORQUINA


Hoy nos vamos a trasladar a Mallorca, y que hay mas tradicional de esta isla aparte de la sobrasada, pues la ensaimada mallorquina.
En el siglo XVII encontramos las primeras referencias escritas sobre la ensaimada de Mallorca. En esta época, aunque el destino principal de la harina de trigo era la elaboración de pan, existen documentos en los que consta la elaboración de ensaimadas mallorquinas con motivo de fiestas y celebraciones.
Las referencias históricas demuestran que la ensaimada de Mallorca forma parte del acervo cultural e histórico de Mallorca, constituyendo sin duda un referente en la repostería propia de la isla, que en el día de hoy conserva todas sus características tradicionales. La Ensaimada de Mallorca es un producto típicamente artesano, siendo fundamental la experiencia del elaborador para conferir al producto sus características

Today I´m taking you all to Mallorca! And what´s more typical from there, aside from "sobrasada", than "ensaimada mallorquina".
The first documented references to"Ensaimada" date back to the 17th century. At the time, most of wheat flour was used to make bread, but there are documents that show ensaimadas were made for holiday and celebration days.
Historical references prove that ensaimada mallorquina is connected to the cultural and historical baggage of Mallorca, being a point of reference in the own island pastry, that nowadays preserves all its traditional characteristics. Ensaimada Mallorquina is a typical artisan product, so the experience of the pastry artisan is really important to give the product its distinctive features. 


Voy a compartir con vosotros como elaborar la ensaimada de Mallorca, este nombre hace referencia a que no lleva ningún tipo de relleno, después vosotros ya podréis experimentar con las otras variantes. Si os gusta rellena de salado la podéis rellenar con una buena sobrasada mallorquina, solo tenéis que cortarla por la mitad una vez fría y rellenar.
En caso de preferir nata, por ejemplo, seria el mismo proceso, cortar por la mitad y rellenar de nata montada.

I am going to tell you the secrets to prepare Ensaimada Mallorquina, this one has no filling but you can try out other variations. If you prefer salty things you just have to fill it with a good quality Mallorca sobrassada (Majorcan sausage). Cut once it´s cold and fill in. You can also try it filled with whipped cream, same process.
